I like all sorts of different types of fruitcakes. I used to think there was just the one type but I now know that there are all sorts and some are nicer than others. I must say that I prefer a really spicy cake. Something with not too much fruit but lots of spice so that it is light and tasty. At certain times I prefer heavier fruit cakes which have been cooked much longer so that they are dark and are full of fruit - like a Christmas cake. These are rich but delicious. I guess I like them because my Mother used to cook such good ones and my Aunt did too. Theirs were completely different in taste. My Mum’s was very spicy and therefore the cake itself looked quite dark and it was quite moist. My Aunts was drier with a nice crunchy top and had no spice in at all. They were both really nice though and would not like to have to say which I liked the best. I have found that whatever cakes I buy now they never come up to the standard that my Mother and my Aunt set. I know that everyone has their own favourite recipe and I guess that they stem from when were children and that we associate that cake with a fun party, presents or visiting relatives, It is funny how we do enjoy certain foods because we have happy memories of them. I know that my Mother loves ice-cream, she could eat it all of the time if she had the chance. When she was a small child the family could not afford it. Her brother worked as a chef in a hotel and he would let he visit him in the kitchens and he would give her some ice cream as a treat. I am sure this is the reason why she likes it so much.
